Chasing black gold: the Truffery

Our truffery brings together oak and hazelnut trees inoculated with black truffle spores. Still in its early stages, it is a long-term project shaped by patience, careful cultivation and the unique growing conditions of Western Australia's South West.

Périgord black truffles are famously difficult to cultivate – which is exactly why we're trying. We'll document the journey here as the truffery matures.
